These things might cause me to go into debt. At first, I looked like an idiot trying to get to the delicious pomegranate seeds because I was trying to use a fork to dig them out. Then, Nicole showed me the genius trick of cutting it and pushing the insides out so the seeds would basically fall out. Ever since learning about the ease of getting to the seeds, my fingers/clothes have been stained with pomegranate juice. I can't stop eating them and I fully intend to eat one immediately after finishing this post. They're not cheap and I'm probably going to ruin a few shirts from the juice going everywhere, but it's a small price to pay.
I've known about the nutritional benefits of kale for a while but I could never convince myself to eat it. Nicole makes kale chips in our dehydrator all the time but they haven't really appealed to me because of the texture. Now, I've discovered the technique of sauteing kale with a bit of olive oil. This has ended up being a great side dish with a piece of grilled fish, pork, or chicken. It's also something that works very well when it's mixed in with scrambled eggs. And it tastes good with a variety of different spices and seasonings. Finally, a way I can enjoy this superfood!
3. Spaghetti Squash
I tried spaghetti squash for the first time last night and I'm already hooked. It was extremely easy to cook and I'm really surprised at how good it tastes. One squash produces a very generous amount of "spaghetti" and I envision it working perfectly with a variety of different sauces. Currently, I'm using it as the base for a pot of ratatouille, which I made over the weekend. This has been another great example of a meal that tastes really good, and just happens to be really good for you. And this is coming from someone with a strong Italian side of the family, making us very picky about our pasta.
