I’m pretty familiar with all the farmers and vendors that are part of the market, but it’s been great to try many of the food trucks from the area. I’d never had anything from the Toasted by Casey food truck until a few weeks ago when I saw them at the river.
I love the concept of Toasted by Casey. I believe they’re based out of Christiansburg but I’ve seen the truck at a few different events in the Roanoke Valley. It’s a truck that specializes in serving toasted sandwiches, especially different versions of grilled cheese. These aren’t just any sandwiches. This is some gourmet grilled cheese.
I ordered the Momma’s Bacon Pimento Cheese.
The sandwich featured cheddar cheese, bacon, pimentos, and a house-mayo cream cheese blend on two pieces of buttered Texas toast. It was a melted, gooey, greasy mess that was delicious. In other words, it was exactly what a grilled cheese should be.
I’ve had pimento cheese sandwiches before but it’s usually been some store-bought cold pimento cheese on some cold pieces of white bread. That type of pimento cheese sandwich is completely different than getting the same type of sandwich from Toasted.
The small chunks of bacon added a smoky crispy flavor and Texas toast holds up perfectly with the melted cheese and the mayo gave it an added element of creaminess.
If anything, I was disappointed in myself for only ordering one. These sandwiches are tasty and I could see how they would quickly become addictive.
Toasted by Casey is one food truck that I might have to start chasing down on the open road.
