The combination of mango, Brie, and pork belongs in my life. It belongs in your life too. The combination of ingredients in this sandwich brings seasons and flavors together in a variety of ways. You can taste a spring BBQ from the slow cooked pork tenderloin, the citrus of summer in the mango chutney, the rich heartiness of winter in the creamy Brie, and the tartness of fall in the apple slices.
You pick up the subtle flavors of the onion roll but the main stars of this sandwich are the pork tenderloin and mango chutney. Generous slices of pork are tender but firm. If anything, the pork is a little on the dry side but this works even better because of the consistency of the mango chutney. The chutney offers a difference in texture but isn't too runny to turn the whole thing into a giant mess.
Funny thing is, I usually don't even like mango! Or Brie cheese! It's something about the textures that bothers me with both of them.
But when it's paired with pork, apple, and an onion roll, it's enough to make me not even notice the texture.
I consider the Harvest Pork & Brie a bountiful harvest indeed!
