As Bubba Blue shared with us in Forrest Gump, shrimp is one of the most versatile foods in the world. This includes being able to throw shrimp on the grill.
It’s one of the simplest things to grill and takes virtually no time. Actually, the one risk with grilling shrimp is that you don’t pay attention and overcook it. Aside from that, you can have a delicious and healthy meal in about five minutes.
This recipe doesn’t do anything fancy, but it still offers plenty of great flavor. And it’s nearly fool proof!
Adapted from Weber’s Real Grilling Cookbook
About 2 pounds of jumbo shrimp, deveined
¼ cup Extra Virgin Olive Oil
¼ cup lemon juice
1 clove of minced garlic
½ teaspoon salt
½ teaspoon black pepper
- In a medium bowl, combine the shrimp with the oil, lemon juice, garlic, salt and pepper.
- Toss gently to coat the shrimp with the liquid mixture. Cover and refrigerate for 30 minutes to 1 hour to let the flavors marinate.
- Grill over Direct High heat until the shrimp are firm to the touch and turning opaque in the center. This should take approximately 2-4 minutes. Turn the shrimp once during the grilling process.
- Serve warm with cocktail sauce. Enjoy!
