The Moroccan Style Chicken with Chickpeas was my first experience with Campbell's Go Soup. I had seen all the different varieties of Campbell's Go Soup at the grocery store and figured trying them would be a good alternative to eating out for lunch every day.
Chicken, chickpeas, tomatoes, and Moroccan spice is a great combination of flavors for soup. You get protein and heartiness from the meat and beans while the Moroccan spices add different notes of heat and sweetness. If you've never tried Moroccan food, it's some of the most flavorful cuisine you'll find in the world. This soup offers just the right amount of heat for me without crossing that fine line of being too spicy.
I also like when soup has different textures. Some people would say that's more of a stew, but I prefer it when a soup has chunks of ingredients to offer something different than just a thick liquid.
This Moroccan style chicken soup offers plenty of texture. The large chunks of chicken and the chickpeas give a soft crunch along with other vegetables that are incorporated into the ingredients.
I was actually surprised at how filling this was for lunch. As with most containers of soup, the entire thing is two serving sizes, but does anyone ever just eat one serving of soup? If so, we probably need to get you checked. Us normal folks would eat the full packet of soup for a meal and it's quite satisfying.
Simple. Tasty. Healthy. Easy. Cheap.
Hard to beat that.
